When I made my Coconut Cream Scones last week I had an idea to use the same base of coconut milk and flour to make biscuits! The scones turned out moist and fluffy instead of dry and crumbly and so I figured the same would work with biscuits. I always struggle combining butter and flour to make dough (I live in NYC and don't have room for a food processor) so any kind of hack on biscuits or scones is life-changing for me. Thankfully using coconut milk as the fat and binding-agent in these biscuits worked and you CANNOT taste any coconut!
I made these ahead of time for my upcoming Easter dinner and I froze them after I baked them. I can tell you that these freeze well and were still delicious the next day (I snuck one)! So, if you're looking for a biscuit or a side to make ahead of time, try these Fluffy Cheddar Chive Bacon Biscuits!
Fluffy Cheddar, Chive & Bacon Biscuits
Ingredients:
3 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups cold coconut milk (this makes the consistency more like sour cream than milk)
1/4-1/3 cup diced bacon
2 packed tablespoons diced chives (scallions or green onion work too!)
1/3 cup shredded sharp cheddar cheese + extra for sprinkling
Directions:
1. Preheat oven to 400 degrees.
2. In a large mixing bowl, combine flour, baking powder and salt.
3. Add in cold coconut milk and stir until a rough dough forms. Knead the dough until all the dry bits are well incorporated.
4. Add in the cheese, chives and bacon and knead until evenly distributed.
5. Roll the dough into a ball and place it on a baking sheet lined with a silicone baking mat or parchment paper. Sprinkle with a little flour.
6. Shape and pat the dough into a circle about 1/2-in to 3/4-in thick. Using a cookie cutter or biscuit cutter (or a cup!) about 2-1/2 to 3-in in diameter, cut the dough into circles.
7. Remove the excess dough and repeat step #6 until all the dough used. You should have about 12 biscuits.
8. Bake for 18-20 min. About halfway through baking, sprinkle the tops of the biscuits with cheese and return the biscuits to the oven.
