Classic Chewy Brownies

My struggle with brownies is REAL. I have never, and I mean never--not even with a box mix--been able to make chewy brownies. They either come out too cakey, too dry, to dark chocolatey...all I want is the perfect brownie! Is that too much to ask?

For the past few weeks I've repeatedly tried and failed at making a batch of brownies. There are SO MANY recipes out there that promise a just-like-a-box-mix-but-better brownie but they ALL fell short! 

I was about to give up and then I found one last recipe that looked doable. OH. MY. GOODNESS. They were the best brownies I've ever made and some of the best brownies I've ever eaten! This is also not just coming from me...I took them to my husband's office and they were gone in two seconds with resounding approval.

I will never make another brownie recipe ever! Not even from a box. Chewy center, crispy edges, crackly top, perfect taste...this is it guys!

Classic Chewy Brownies

 

Ingredients:

1 cup milk chocolate chips

1/2 cup semi sweet chocolate chips

1 cup butter

1/4 cup milk

1 cup sugar

3 eggs

2/3 cup flour

2 tablespoons cocoa powder

1 teaspoon vanilla

 

Directions:

1. Preheat oven to 325 degrees.

2. Using a double boiler, or a mixing bowl over a shallow simmering pot of water, add the butter and chocolate chips together and mix until melted. Add the milk once smooth. Let cool.

3. In a separate mixing bowl, beat together the eggs, sugar and vanilla by hand until well combined.

4. Once the chocolate mixture is cooled to room temp, pour it into the egg mixture and stir well.

5. Sift in the flour and cocoa powder and stir until just combined. You don't want too much air in the brownies!

6. Line an 8x8 or 9x9-in baking pan with tin foil and grease. Pour in the brownie mixture and bake for 30-35 min for a nice chewy brownie.

7. Let cool too room temperature before removing from the pan and cutting.

Enjoy these all by yourself! Or maybe share a few...

Enjoying the fruits of my quarantine baking πŸ€ͺ stayed up until 3 making these pumpkin loaves so I could enjoy them for the next several days. Are you baking up anything lately??? Not bad, but not as good as ones I’ve at at @maisonkayserusa, even though I followed their recipe exactly. I even measured my ingredients in grams 😱 it’s okay though!
