I was reading one of my favorite food blogs the other day--y'all have probably already heard of Grandbaby Cakes, but she makes delicious foods. Like, so gooood. I love that for her, baking is an experience of remembrance, togetherness, and making new memories. That's probably why I connect with her so much because that's exactly how I feel about baking too.
Anyway, since reading her blog I've kinda been on a baking kick sooooo you're welcome!
This Banana-Blueberry Cake with Cinnamon Cream Cheese Frosting is a unique combo. The fruity flavors paired with a rich cream cheese frosting are so incredibly good. I personally think this cake tastes even better the next day as it allows the flavors to settle, so this is one you can definitely make ahead, especially because it's made in a 9x13-in pan!
Banana Blueberry Cake with Cinnamon Cream Cheese Frosting
Cake:
1/2 cup melted butter
1 cup sugar
2 eggs
2/3 cup Greek yogurt (I use Siggi's Icelandic yogurt typically in a berry flavor!)
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups all-purpose flour
1 teaspoon baking soda
2 mashed ripe bananas
1 1/2 cups blueberries
1/2 cup milk of your choice
1/3 cup sliced almonds (optional)
Frosting:
8 oz softened cream cheese
1/2 cup softened butter
2 teaspoons vanilla extract
4 cups powdered sugar
1/2 teaspoon cinnamon
2 tablespoons milk of your choice
Directions:
For the cake:
1. Preheat oven to 350 degrees.
2. Mash ripe bananas, add sugar, melted butter, and eggs. Combine.
3. Add extracts, nutmeg, cinnamon and Greek yogurt. Mix well.
4. Add baking soda, mix well. Then add flour in increments while continually stirring the batter.
5. Stir in milk and add fold in blueberries last.
6. Pour batter into greased 9x13-in pan.
7. Bake for 35-45 minutes or until an inserted knife comes out clean.
8. Cool cake completely before frosting.
9. Garnish with sliced almonds after frosting if desired.
For the frosting:
1. Mix cream cheese and butter until smooth.
2. Add powdered sugar in increments and mixing between each addition.
3. Add vanilla extract, cinnamon and milk, and mix until smooth.
4. Frost once the cake is cooled!
