I feel like I always procrastinate baking for the holidays and I really am trying to get better at it! So, if you're like me and need an easy, quick and cute treat for Valentine's Day, this is it! These cookies are egg-free and you likely have most of the ingredients in your kitchen already!
These thumbprint cookies are shortbread based which is literally a combination of sugar, butter and flour. Fill them with your favorite jam and garnish with slivered almonds to make cute little hearts! They're adorable, and so yummy. When I made them for my husband, he literally stopped in his tracks, closed his eyes and said, "These are some of the best cookies ever!"
And I make a LOT of cookies!
Raspberry-Almond Thumbprint Cookies
Ingredients:
1 cup softened butter (not melted!)
2/3 cup white granulated sugar
2 cups all-purpose flour
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/3 cup raspberry jam (or jam of your choice)
1/4 cup slivered almonds
Directions:
1. Preheat oven to 350 degrees.
2. Cream together butter, sugar and extracts.
3. Add flour and mix until well-combined. Dough may be crumbly.
4. Scoop and roll dough into 1-in balls, working the dough until it comes together. Place 1-in apart onto a cookie sheet (I always use a silicone baking mat).
5. Using the bottom of a teaspoon, press the middle of each cookie until it forms a well. Fill each cookie with jam (about 1/2 teaspoon). Place two slivered almonds on top of the jam creating a "heart".
6. Bake for 12-14 minutes, or until the bottoms of the cookies are lightly browned. Yields about 24 cookies.
