I love baking with fruit (if you haven't already noticed)! A lot of the recipes I make tend to start with me asking myself what I have in the kitchen, and usually I always have frozen fruit. I wanted to make a quick bread that I could enjoy for breakfast, so I tried making this with Truvia, which is blend of stevia and sugar. I tend to use it when I'm trying to consciously cut back on sugar in a recipe and it worked really well with this one! If you want to use regular sugar in this recipe you totally canβI've listed the alternative measurements for sugar in the recipe below!
Raspberry Oat Loaf
This Raspberry Oat Loaf has the perfect level of sweetness! I like to make it in advance so I can enjoy a slice for breakfast throughout the week!
Ingredients
- 1 3/4 cup flour
- 1 cup quick oats
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 eggs
- 1/2 cup stevia baking blend
- OR 3/4-1 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2/3 cup greek yogurt
- 1/2 cup water
- 1/2 cup coconut, canola or vegetable oil
- 1 cup raspberries
Instructions
1. Preheat oven to 350 degrees.2. In a large mixing bowl, combine eggs, stevia (or sugar), extracts and oil.3. Add in the dry ingredients. Mix well.4. Mix in the yogurt, and then the water making sure to mix everything well.5. Gently fold in the raspberries.6. Pour into a standard 1 pound loaf tin and bake for about 65 min.
