I made these scrumptious and rich Peppermint Fudge Brownies over the holidays, but I think they can be enjoyed all winter long! I’m not ready yet to say “bye” to holiday flavor combos as long as the weather is still cold!

These brownies are totally tempting and 100% worth the indulgence. They have the most gorgeous balance of chocolate and peppermint, and the icing is the perfect touch that take these brownies to the next level. I’m sure the icing would taste great on other desserts like blondies, or even a sheet cake!

Peppermint Fudge Brownies

These brownies are amazing! I reinvented my classic brownie recipe by topping it with a layer of chocolate and peppermint fudge icing and a sprinkle of crushed candy canes.
prep time: 45 Mcook time: 45 Mtotal time: 90 M

ingredients:

Brownies
  • 1 cup milk chocolate chips
  • 1/2 cup semi sweet chocolate chips
  • 1 cup butter
  • 1/2 cup milk
  • 1 cup granulated sugar
  • 3 large eggs
  • 2/3 cup flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla
Peppermint Fudge Icing
  • 6 tablespoons milk
  • 6 tablespoons butter
  • 1 1/3 cups sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup Guittard or Ghirardelli semi sweet chocolate chips
  • 4 drops peppermint essential oil
Topping
  • 2 crushed candy canes

How to cook Peppermint Fudge Brownies

Brownies
  1. Preheat the oven to 325 degrees.
  2. In a microwave safe bowl heat the butter and milk together until melted.
  3. Place the chocolate chips in a separate bowl, and pour the melted butter and milk over the chocolate chips. Stir together until smooth, and let it come to room temperature.
  4. In a large bowl, beat together the eggs, sugar and vanilla.
  5. Once the melted chocolate chip mixture is cooled, stir it into the combined eggs, sugar and vanilla.
  6. Sift in the flour and cocoa powder and stir until just combined.
  7. Line a 8 x 8 or 9 x 9 baking tin with parchment paper and evenly pour in the brownie batter.
  8. Bake for 30-35 minutes. Don't over bake!
  9. Let the brownies cool in the fridge for about 20-30 minutes and then make the fudge icing. The fudge icing sets quickly, so only make it once you're ready to use it!
Peppermint Fudge Icing
  1. On medium heat, combine the butter, milk and sugar in a saucepan. Bring to a boil while stirring constantly.
  2. Once it reaches a boil, continue to stir for 1 minute. Then promptly remove from heat.
  3. Quickly stir in the salt, vanilla, chocolate chips and peppermint essential oil.
Assembly
  1. Moving fast, pour the icing over the brownies and then immediately garnish with chopped candy canes. Once the icing begins to set, don't touch it if you want it to stay pretty and smooth.
  2. Let cool for about 10-20 minutes and then cut and serve. Enjoy!

Enjoying the fruits of my quarantine baking 🤪 stayed up until 3 making these pumpkin loaves so I could enjoy them for the next several days. Are you baking up anything lately???
