I’m a sucker for banana bread. I feel like I ALWAYS have bananas in my kitchen, so it’s something I like to whip up often. I made this when my little brother came to town and he loved it! He ate it for breakfast, lunch, and dinner…so did I. It was gone in ONE day!

I love a classic banana bread but sometimes it’s nice to play with different flavors. My Double Chocolate Banana Bread is divine and I would say this Cinnamon Swirl Banana Bread is right up there! It’s not overly sweet, I cut down the sugar in the batter since I added the cinnamon-sugar swirl and cream cheese icing, and it turned out to be a great balance. If you want to use even less sugar you could get away with cutting down the brown sugar to 3/4 cup.

CINNAMON SWIRL BANANA BREAD

This banana bread meets cinnamon roll recipe is divine! I tweaked my favorite buttery banana bread recipe, baked it with a layer of cinnamon sugar in the middle, and covered it with a cream cheese icing.

ingredients:

Banana Bread
  • 4 mashed bananas
  • 1 cup melted butter
  • 1 cup brown sugar
  • 1 cup plain greek yogurt
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 teaspoon cinnamon
Cinnamon Swirl
  • 1/2 cup white sugar
  • 1 teaspoon cinnamon
Cream Cheese Icing
  • 1 cup powdered sugar
  • 2 tablespoons softened cream cheese
  • 1 teaspoon vanilla
  • 1-2 tablespoons milk

instructions:

How to cook CINNAMON SWIRL BANANA BREAD

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mash the bananas until there are only a few chunks.
  3. Mix in the eggs until well combined.
  4. Mix in the sugar, butter, yogurt and vanilla until well incorporated.
  5. Sift in the dry ingredients and mix well.
  6. Grease two 8- inch loaf pans, and spoon a quarter of the batter into each loaf pan.
  7. In a small bowl, mix together the cinnamon and white sugar. Spoon half of the cinnamon-sugar onto each loaf in an even layer, then cover with the remaining batter.
  8. Bake for 50-60 minutes or until a toothpick comes out with a few moist crumbs.
  9. While the loaves cool, make the icing.
  10. In a small bowl, cream together the softened cream cheese and milk.
  11. Sift in the powdered sugar and add in the vanilla. Mix until smooth.
  12. Once the loaves have cooled to room temperature, drizzle the icing and enjoy!

Enjoying the fruits of my quarantine baking 🤪 stayed up until 3 making these pumpkin loaves so I could enjoy them for the next several days. Are you baking up anything lately??? Tried making these @redtruckbakery Pumpkin Scones today! They were delish. I omitted the raisins and added an additional 1/4 C sugar. I think next time I might try making these apple flavored!
