I've wanted to make a coconut cake for a while now, especially since I read The Coincidence of Coconut Cake, but none of the recipes I found seemed coconut-y enough. I wanted a cake that was moist (sorry, I know, awful word...can we make up a new one), filled with coconut flavor in every way possible, and covered with a delicious coconut buttercream. Levain Bakery in New York City is known for making the best chocolate chip walnut cookies. The cookies are served warm and fresh out of the oven. The 6 oz treats melt in your mouth, and cause lots of happy sighs and eye-rolling. I decided I was over waiting in line to get my hands on a cookie so I searched for a good copy-cat recipe, made some tweaks, and came up with a cookie that I personally like even better!

A couple of weekends ago we both felt like leaving town and wound up at our fave spot--Jones Farm. I seriously cannot sing enough praises about this place! If you ever get the chance to visit New York and find yourself wanting to do a day-trip, go here! I love their pies, cookies*, turkey sandwiches, syrups, breads, mac & cheese, even their Irish soda bread. Everything is plain good. And the people who run it are so incredibly nice! It is my happy place.
