"Naked" Lemon Poppyseed Cake

Lemon Poppyseed Cake is my husband's favorite! He asks for it every year for his birthday! This year I tried and tweaked a new recipe and I LOVE the way it turned out. It's full of lemon flavor, and is lightly frosted and filled with lemon curd and a cream cheese frosting.

Blueberry Pear Cornmeal Cake

I decided to make this cornmeal cake and added some fresh pears and blueberries to it, and greek yogurt to the batter, and my eyes were opened! Desserts with cornmeal don't have to be dry! This cake ended up being SO GOOD, not overly sweet, and looked simply pretty. I served it with a blueberry compote and it was scrumptious. I would make this Blueberry Pear Cornmeal Cake again in a heartbeat, and now I want to figure out the perfect cornbread recipe!

Enjoying the fruits of my quarantine baking πŸ€ͺ stayed up until 3 making these pumpkin loaves so I could enjoy them for the next several days. Are you baking up anything lately??? Tried making these @redtruckbakery Pumpkin Scones today! They were delish. I omitted the raisins and added an additional 1/4 C sugar. I think next time I might try making these apple flavored! Not bad, but not as good as ones I’ve at at @maisonkayserusa, even though I followed their recipe exactly. I even measured my ingredients in grams 😱 it’s okay though! Super grateful to be in a warm and sunny place with my Valentine πŸ’• We decided every February we have to escape the cold to maintain our sanity πŸ˜… I’m not complaining!
