Banana Cake

This banana cake is soooo good and super rich--a little slice goes a long way! Picture the best banana bread you've had, in cake form, covered with the perfect amount of cinnamon cream cheese frosting. MMMMMM.

This recipe came about because I had too many bananas that needed to be used and I wasn't feeling regular banana bread, I wanted a DESSERT. I messed up a little on my frosting, it wasn't as smooth as I would've liked, but that's because I had little patience waiting for my butter to get to room temperature. However, even though my frosting wasn't perfect, it still tasted amazing! Just take a tip from me and really wait for the butter and cream cheese to FULLY come to room temperature, and then you'll have silky smooth frosting.

I shared this cake with with a non-banana lover and they asked for a second slice, so if you doubt me, believe them!

Banana Cake

This cake is like your favorite banana bread in cake form, covered with a scrumptious layer of cinnamon cream cheese frosting!

ingredients:

Cake
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup melted butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 cup heavy cream
  • 3 ripe mashed bananas
Frosting
  • 2 sticks or 1 cup room temperature butter
  • 1 package or 8 oz room temperature cream cheese
  • 3 cups powdered sugar
  • 1 tablespoon vanilla
  • 3 teaspoons cinnamon
  • 2-4 tablespoons heavy cream

instructions:

  1. Preheat the oven to 350 degrees.
  2. Mash the bananas making sure there are no large chunks.
  3. Mix  in melted butter and sugar. Add the eggs and vanilla.
  4. Mix in the baking soda and flour. Then add the heavy cream. Beat together for 2 minutes.
  5. Grease and line two 8" cake rounds with parchment paper and oil of choice.
  6. Evenly divide the batter between the two rounds and bake for 30-35 minutes or until an inserted toothpick comes out clean. Chill until completely cooled.
  7. While the cake bakes/cools, mix together room temperature butter and cream cheese until smooth.
  8. Add in powdered sugar in 1/2 cup increments and if the frosting is too thick, add heavy cream 1 tablespoon at a time.
  9. Lastly, mix in the cinnamon! Place in the fridge until ready to use.
  10. Frost the cake and decorate with whatever suits your fancy! I used crushed pecans and caramelized bananas but walnuts would taste great too!

Enjoying the fruits of my quarantine baking πŸ€ͺ stayed up until 3 making these pumpkin loaves so I could enjoy them for the next several days. Are you baking up anything lately??? Not bad, but not as good as ones I’ve at at @maisonkayserusa, even though I followed their recipe exactly. I even measured my ingredients in grams 😱 it’s okay though!
