Baking these Russian Tea Cakes today took me back to baking with my family, and getting ready for Christmas Eve Dinner! These cookies are basically round shortbread cookies filled with nuts and rolled in powdered sugar. I've also heard them referred to as "Mexican Wedding Cookies" and "Snowball Cookies".
The holidays are the only time my dad cooks! He would usually make these cookies and eventually I took over baking them. They require only a few ingredients, but theyβre delicious, and you only need one or two to satisfy your sweet tooth!

Russian Tea Cakes
These Russian Tea Cakes were a Christmas staple in my family growing up! They're pretty much round shortbread cookies filled with nuts and rolled in powdered sugar. I've also heard them referred to as "Mexican Wedding Cookies" and "Snowball Cookies".

ingredients:
- 1 cup softened butter
- 1/2 cup powdered sugar + extra for rolling cookies
- 2 teaspoons vanilla
- 2 1/4 cups flour
- 3/4 cup finely chopped walnuts

How to cook Russian Tea Cakes
- Preheat oven to 400 degrees.
- Mix butter, powdered sugar and vanilla together until smooth.
- Mix in the flour until combined but crumbly. Do the same for the chopped nuts. The dough should look rough.
- Work dough into 1 inch balls and place 1 inch apart on a baking sheet.
- Bake for 10-12 minutes.
- Let cool completely, then roll in powdered sugar.
