Baking is one of my favorite things to do! It's a fun creative outlet, and I always feel a sense of accomplishment when I have something beautiful and delicious to share with my family and friends!
I had some bananas sitting around and figured it was about time I used them up, plus I justify banana bread as being a decent breakfast food.
I found this recipe online, but I made some tweaks to it that make it ultra moist (forgive me for using that word) and just a littttle different than your regular banana bread, and it comes out looking really dang pretty.
Butter Banana Bread Recipe
Bread:
2-3 large ripe bananas (mashed)
1/2 cup melted butter
3/4 brown cup sugar
2/3 cup Greek yogurt (I used Siggi's Icelandic yogurt because it's super thick!)
2 beaten eggs
1 tablespoon vanilla bean paste OR vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
a dash of cinnamon
Topping:
A small handful of sliced almonds (or any nut of your choosing!)
3 slabs of butter
1 tablespoon sugar
Directions:
1. Preheat oven to 350 degrees.
2. Mash the bananas to where the chunks are mostly gone.
3. Add sugar, melted butter, egg, vanilla and yogurt. Mix well.
4. Add baking soda and salt. Mix well.
5. Add flour in 1/2 cup increments, mix between each.
6. Grease an 8x4 bread pan, then pour the banana bread mixture in and spread evenly.
7. Place three, evenly spaced slabs of butter on top of the batter then sprinkle the almonds and sugar.
8. Bake for 45 minutes to an hour. The bread will be done when a knife inserted comes out clean or with just a few crumbs.
