Butter Banana Bread

Baking is one of my favorite things to do! It's a fun creative outlet, and I always feel a sense of accomplishment when I have something beautiful and delicious to share with my family and friends!

I had some bananas sitting around and figured it was about time I used them up, plus I justify banana bread as being a decent breakfast food.

I found this recipe online, but I made some tweaks to it that make it ultra moist (forgive me for using that word) and just a littttle different than your regular banana bread, and it comes out looking really dang pretty.

Butter Banana Bread Recipe

 

Bread:

2-3 large ripe bananas (mashed)

1/2 cup melted butter

3/4 brown cup sugar

2/3 cup Greek yogurt (I used Siggi's Icelandic yogurt because it's super thick!)

2 beaten eggs

1 tablespoon vanilla bean paste OR vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

a dash of cinnamon

 

Topping:

A small handful of sliced almonds (or any nut of your choosing!)

3 slabs of butter

1 tablespoon sugar

 

Directions:

1. Preheat oven to 350 degrees.

2. Mash the bananas to where the chunks are mostly gone.

3. Add sugar, melted butter, egg, vanilla and yogurt. Mix well.

4. Add baking soda and salt. Mix well.

5. Add flour in 1/2 cup increments, mix between each.

6. Grease an 8x4 bread pan, then pour the banana bread mixture in and spread evenly.

7. Place three, evenly spaced slabs of butter on top of the batter then sprinkle the almonds and sugar.

8. Bake for 45 minutes to an hour. The bread will be done when a knife inserted comes out clean or with just a few crumbs.

Enjoying the fruits of my quarantine baking 🤪 stayed up until 3 making these pumpkin loaves so I could enjoy them for the next several days. Are you baking up anything lately??? Tried making these @redtruckbakery Pumpkin Scones today! They were delish. I omitted the raisins and added an additional 1/4 C sugar. I think next time I might try making these apple flavored! Guys I have a pin that’s KILLING IT on Pinterest 😱 Maybe I should hop back on there and keep pinning 🤔??? It has 222 saves, literally out of nowhere 🤯 do you still use Pinterest? I’m reconsidering it now 😂 Guys...this bread 🤤 Just playing around in the kitchen today! These financiers were okay. Not bad, but not as good as ones I’ve at at @maisonkayserusa, even though I followed their recipe exactly. I even measured my ingredients in grams 😱 it’s okay though! Super grateful to be in a warm and sunny place with my Valentine 💕 We decided every February we have to escape the cold to maintain our sanity 😅 I’m not complaining!
