Apple Crumble Muffins
These fluffy Apple Crumble Muffins are delicious, light and full of apple flavor. Enjoy them for breakfast or as a snack!

Muffins
- 1/2 C canola oil
- 1/2 C brown sugar
- 1/4 C granulated sugar
- 1/2 C buttermilk
- 2 eggs
- 2 teaspoons vanilla extract
- 2 C all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 1 1/2 C chopped peeled apples
Crumble
- 1 C flour
- 3/4 C brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons cinnamon
- 6 tablespoons melted butter

How to cook Apple Crumble Muffins
Crumble
- Mix together the dry ingredients.
- Stir in the melted butter, and mix until a rough crumble forms.
- Set aside and refrigerate until ready to use.
Muffins
- Preheat the oven to 375.
- Mix together the oil, sugar, eggs, and vanilla.
- Add in the dry ingredients and mix.
- Then stir in the buttermilk in increments.
- Fold in the chopped and peeled apples (chopped to about 1/4 inch squares).
- Line a muffin tin with muffin liners and evenly distribute the batter.
- Spoon a generous amount of crumble on each of the muffins, pressing down lightly.
- Bake for 20-25 minutes until a inserted toothpick comes out with a few light crumbs.
